Laax Relies On Green Style And Digitization In The Catering Industry

The start of the main season is approaching and with it the challenge of safely and easily catering for a large number of guests on the mountain. A digital gastronomy concept is intended to remedy this in LAAX and ensure sufficient distance and security in the restaurants. But LAAX is also taking an important step into the future in the take-away sector and is now relying on reusable tableware in cooperation with a Swiss company.
In order to safely cater for guests on the mountain in the winter season 2021/22, LAAX is switching from self-service to semi-service in the largest self-service restaurants. Digital tools such as the destination's own INSIDE LAAX app make the new process possible. In addition, LAAX is pleased to be able to significantly reduce single-use tableware with immediate effect and to offer guests reusable solutions from the Swiss company "reCIRCLE".
Safe gastronomy experience thanks to the digital process
In the former self-service restaurants Vorab, Nagens, GALAAXY and Segneshütte, guests no longer have to queue at counters in the self-service area. You can easily order your food from your seat using the INSIDE LAAX app or at an automatic ordering machine and it will be served directly to your table. The dishes are no longer prepared on the mountain, but in a central kitchen in the valley. The centralized preparation not only ensures the consistently high quality in the aforementioned restaurants, it also contributes to the sustainability goals of LAAX: By planning the ingredients more precisely, food waste can be reduced and CO2 emissions from food transport reduced by 25% will.
Cooperation with the Swiss company "reCIRCLE"
Since 2010, the winter sports area has been implementing measures and goals for the careful use of natural resources with the specially developed “Greenstyle” sustainability concept. One of these goals is to keep 100% of the ecological cycle and to reduce waste in the catering trade by half by 2023 - this also includes broken china. Thanks to high-quality, durable reusable tableware made of 70% plastic and 30% glass fibers, LAAX is getting a little closer to this goal.
CEO and founder of the award-winning Swiss reusable company "reCIRCLE", Jeannette Morath, is delighted with this system change and says: "The ski area is making an important contribution and is playing a pioneering role." The new reusable tableware is completely vegan and made in Switzerland. It is now being used in the four largest self-service restaurants mentioned - for take-away, but also for consumption at the table. The reusable tableware is to be continuously introduced in other restaurants.
New quality label for LAAX gastronomy
Greenstyle goes even further: under the new label “LAAX ALWAYS TASTY”, values ​​and measures are bundled that are intended to improve the LAAX gastronomy experience in the long term - for the benefit of guests, but also the environment. Increased attention is paid to offering guests with food intolerances, vegan and vegetarian diets appropriate options. In the area of ​​food procurement, local, regional and Swiss producers are consistently used.
