Grand Hyatt Vail Announces New Offerings For Milestone Winter 2022/2023

Grand Hyatt Vail, situated at the base of Vail Mountain with the most convenient ski-in ski-out access to the legendary slopes of Vail via Chair 20, announces a milestone winter season with a programming lineup featuring new activities, as well as returning favorites for skiers and non-skiers alike. Providing convenient access to over 5,300 skiable acres, Grand Hyatt Vail celebrates its 40th anniversary (December 9, 1982) in conjunction with Vail Mountain’s 60th anniversary (December 20, 1962) this winter.

New this Winter Season

From families and groups to solo-travelers and couples, Grand Hyatt Vail is the perfect Vail basecamp for memorable moments just steps away from the guestroom, and newly expanded offerings ideal for an array of travelers this winter season.
  • Grand Winter Moments: Acting as the perfect holiday celebration, Grand Winter Moments will consist of daily festive activities and special dining experiences from December 19 to January 1. Guests can expect two weeks of holiday cheer with daily s’mores roasting, hot cocoa and cookies, ornament and stocking decorating, après ski entertainment and live music, champagne sabering, family movie night, free Topgolf in the Swing Suites, caricatures, gingerbread house decorating, a meet and greet with Santa, Menorah lighting and more.
  • Gessner Restaurant and Bar: Gessner, the resort’s signature restaurant, invites guests to experience a truly alpine inspired fine dining experience. New Executive Chef Pascal Coudouy presents a reimagined menu for the winter season, showcasing the authentic flavors of the Colorado Rockies with light salads, hearty soups, vegetarian specialties and Rocky Mountain game entrées. Standouts include a Chestnut Bisque with apple butter and caramelized onion; Braised Short Rib served with creamy polenta, roasted baby carrot, spinach and natural jus and Olive Oil Poached Artic Char with celery, granny smith apple, picked fennel and grapefruit.   • Yoshimi Pop-Up Restaurant: Having received rave reviews during its inaugural launch last winter, Grand Hyatt Vail is pleased to announce Yoshimi Pop-Up Restaurant’s return for an unforgettable dining experience within the resort’s stylish setting. In collaboration with the internationally acclaimed Yoshimi culinary team from the renowned Yoshimi Restaurant at the Hyatt Regency, Mexico City, this highly anticipated sushi pop-up features signature maki rolls, handmade nigiri, Sapporo on tap and Suntory Highball whiskey on draft.   • Après-Tunity in the Moët Imperial Yurt:Returning for its second winter season, and open to the public, guests will find themselves immersed in a chic and cozy respite beneath the golden colored tapestry of the Grand Hyatt Vail yurt. Acting as the ideal après ski spot after a day in the mountains, the Moët Imperial Yurt will be open Wednesday through Saturday from 3 to 6 p.m. and feature fire pits, champagne, cocktails, charcuterie and more. In celebration of Vail Mountain’s anniversary, the Moët Yurt will participate in Vail’s 60th Anniversary Après Passport with specialty drinks and cocktails.

Private Dining

Those seeking an intimate dining experience may opt to dine in a private space at Grand Hyatt Vail. Choose from one of three private event spaces including Gessner’s private dining room, the Moët Imperial Yurt, or Private Boardrooms. The event space pricing is $1000, $2000 and $500 respectively with a hosting fee of $200 per person and $100 per child 12 and under. Interested parties need a minimum of eight people to book.
